The bananas, maple syrup and coconut sugar add just the right amount of sweetness and the mix of almond and oat flour makes this banana bread super filling as well.

Almond Banana Bread
Equipment
- 1 High Speed Blender optional
- 1 Cake Tin
Ingredients
- 100 g gluten-free oat flour
- 6 tbsp almond flour
- 1 tbsp coconut sugar
- 2 ripe bananas
- 2 tbsp maple syrup
- 1 tsp cinnamon
- pinch of salt
- blanched almond shreds
- peanut butter for drizzling
Instructions
- Preheat oven to 170°C.
- Put bananas and maple syrup in a blender and blend until smooth. If you don’t have a blender you can use a fork to mash the banana.
- In a separate bowl, add all dry ingredients and mix to combine.
- Add the banana maple syrup mixture to the dry ingredients and combine into a thick batter.
- Pour batter into a small oven safe dish lined with parchment paper and sprinkle with blanched almonds. Bake in the oven for 60 minutes.
- Allow the banana bread to cool completely before serving and drizzle with peanut butter.
