I could have this delicious almond banana bread everyday for breakfast and not get tired of it it’s that good. It’s so fluffy, sweet and easy to make. The blanched almonds add the perfect crunch and the peanut butter adds a lovely creaminess and makes it taste so good. This is my go-to banana bread recipe because it never disappoints. The bananas, maple syrup and coconut sugar add just the right amount of sweetness and the mix of almond and oat flour makes this banana bread super filling as well.

Almond Banana Bread

This is the best vegan and gluten-free almond banana bread recipe. It's healthy, naturally sweetened and absolutely delicious.

Equipment

  • 1 High Speed Blender optional
  • 1 Cake Tin

Ingredients

  • 100 g gluten-free oat flour
  • 6 tbsp almond flour
  • 1 tbsp coconut sugar
  • 2 ripe bananas
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • pinch of salt
  • blanched almond shreds
  • peanut butter for drizzling

Instructions

  • Preheat oven to 170°C.
  • Put bananas and maple syrup in a blender and blend until smooth. If you don’t have a blender you can use a fork to mash the banana.
  • In a separate bowl, add all dry ingredients and mix to combine.
  • Add the banana maple syrup mixture to the dry ingredients and combine into a thick batter.
  • Pour batter into a small oven safe dish lined with parchment paper and sprinkle with blanched almonds. Bake in the oven for 60 minutes.
  • Allow the banana bread to cool completely before serving and drizzle with peanut butter.

Notes

Portion Size: You can simply double the ingredients to serve more people.

Homemade Strawberry Jam 🍓 Ingredients: 250 g s Homemade Strawberry Jam 🍓

Ingredients:
250 g strawberries fresh or frozen
2 tbsp chia seeds
1/2 lemon juiced
1-2 tbsp maple syrup or coconut sugar optional

Directions:
1. Heat strawberries in a small saucepan over medium-high heat, stirring occasionally, until the strawberries begin to break down. Use a spoon to mash them.
2. Stir in the chia seeds and lemon juice until combined. Then taste and stir in 1 or 2 tablespoons sweetener if needed.
3. Remove from the heat and let the jam cool completely to thicken.

Afternoon Tea Scones 🫖
 Ingredients: (6 servi Afternoon Tea Scones 🫖

Ingredients: (6 servings)
150 g oat flour gluten-free
30 g coconut flour
45 g coconut sugar
1 tsp baking powder
1/4 tsp salt
3 tbsp coconut oil solid
125 ml ice water

Directions:
1. Preheat oven to 190℃.
2. Put the oat flour, coconut flour, baking powder, coconut sugar and salt into a blender or food processor and pulse to combine.
3. Add the solid coconut oil and pulse to combine. The mixture should look slightly damp. Then slowly add in the ice water until a dough forms.
4. Lightly dust your worktop with coconut flour and roll out the dough. Divide the dough into 6 small balls and lightly pat them flat.
5. Bake in the preheated oven for 15 minutes until golden brown and firm to the touch. Carefully transfer scones to a wire cooling rack.

The most delicious quick and easy crispy broccoli The most delicious quick and easy crispy broccoli tahini noodles 🥦 

Ingredients: (2 servings)

For the sauce:
3 tbsp coconut aminos
80 g tahini
2 tbsp coconut sugar
1/2 lemon, juiced
1 tbsp freshly grated ginger
2 cloves of garlic, minced
2 tbsp tomato paste
1/2 tsp chili flakes
4 tbsp water

For the broccoli:
1 tbsp sesame oil
1 head of broccoli
Salt and pepper

For the noodles:
I used rice noodles for this recipe

Directions:
1. Make the sauce by combining all the ingredients into a bowl and whisk everything together until you get a thin and pourable sauce.
2. Add a tablespoon of sesame oil into a pan. Then add your broccoli and season with salt and pepper. Sauté the broccoli until tender.
3. In the meantime, cook your noodles according to package instructions.
4. Combine the noodles, broccoli and sauce and serve with sesame seeds or coriander.

1 ripe banana
handful of spinach
1 orange juiced
50 ml water optional
Shredded coconut
Gluten-free granola
Blueberries

Directions:
1. Simply put all ingredients in a blender and blend until well combined and creamy.
2. Garnish with your favourite toppings such as shredded coconut, mixed berries and gluten-free granola.
