Summerrolls are such an easy and delicious snack in the summertime. I love that you can add any ingredients you enjoy. Personally, I like having them with rice noodles, finely sliced cucumber and red bell pepper for a nice crunch. Of course you can add any ingredients you like or currently have in the fridge. Summerrolls taste amazing with red cabbage, spring onion, tofu, mango, fresh coriander or sesame seeds as well. And don’t forget the creamy peanut sauce for dipping!
Creamy Peanut Sauce
The star of the show is obviously the creamy peanut sauce. All you need is peanut butter, water, coconut aminos, maple syrup, lemon or lime juice and garlic powder. If you can’t have peanut butter you can substitute with almond butter, cashew butter, tahini or any other nut butter.

Summerrolls with Peanut Sauce
Ingredients
For the summerrolls
- rice paper sheets
- rice noodles
- 1 cucumber finely sliced
- 1 red bell pepper finely sliced
- lettuce finely sliced
For the peanut sauce
- 3 tbsp peanut butter
- 2 tbsp coconut aminos more to taste
- 3 tbsp maple syrup
- 1 tsp garlic powder
- 1/2 lemon or lime juiced
- 1-2 tbsp hot water
Instructions
For the summerrolls
- Cut your vegetables into thin sticks and cook your rice noddles according to package instructions.
- Place your rice paper sheet into water for about 5 seconds. Put the soaked rice paper on a plate and wait until it starts to soften. Then add your ingredients.
- Roll up each sheet and make sure not to overfill them.
For the peanut sauce
- Whisk all ingredients together in a small bowl until smooth. You can also use a blender.
Notes
- You can add any fillings you enjoy. I also like adding fresh coriander, mint, mango, red cabbage, sesame seeds, tofu, spring onion or carrot.
