May I introduce you to my latest food addiction? Hummus and tomato bruschetta. This delicious combination is perfect for a quick snack, appetizer, lunch or dinner. I recently shared my Creamy Hummus recipe which is the base of this sandwich. The creamy hummus goes so well with the tangy bruschetta. It a flavour explosion! I like to keep my recipes pretty simple so I only used four ingredients for the bruschetta. This recipe is oil-free, vegan and gluten-free.
Gluten-free bread
I have to give a huge shout out to this wonderful gluten-free patisserie called Isabella. They truly make the most delicious gluten-free bread that is also corn and yeast-free. I get a fresh loaf of bread at least once a week and they freeze well too!
Tomato bruschetta ingredients
For the tomato bruschetta I used cherry tomatoes, garlic, lemon juice and fresh basil. You can also use red onion or different herbs like parsley or coriander.

Hummus Tomato Bruschetta
Ingredients
For the tomato bruschetta
- 100 g cherry tomatoes chopped
- 1 clove of garlic chopped
- 1 small red onion chopped
- 1/2 lemon juiced
- fresh basil
- salt and pepper to taste
Other Ingredients
- homemade hummus
- gluten-free bread
Instructions
- In a small bowl, combine tomatoes, garlic, onion, basil, lemon juice, salt and pepper.
- Spread a thick layer of homemade hummus onto your gluten-free bread and add your tomato mixture on top.
