Add oat milk, chia seeds, maple syrup, vanilla extract and red pitaya powder into a glass jar and whisk to combine. Set aside for a minute and whisk again.
Cover with a lid and refrigerate for at least 3 hours but I recommend leaving it in the fridge overnight.
Take it out of the fridge and stir through the chia pudding again. Then divide into serving glasses. Garnish with raspberries or other fresh berries and shredded coconut. Of course you can add any other toppings you enjoy.
