Creamy Butternut Squash Soup Recipe 👩🏼‍🍳

Warm up with a bowl of this creamy butternut squash soup – the ultimate comfort food for chilly days! 🍂 This velvety, vegan soup combines roasted butternut squash, creamy coconut milk and aromatic spices for a flavour-packed dish. Perfect for meal prep or a quick, nourishing dinner!

Ingredients: (4 servings)
1 butternut squash, cubed
1 shallot, diced
2 cloves of garlic, minced
2 dried sage leaves
1 tsp garlic powder
1 tsp curry powder
1 tsp turmeric
1 tsp smoked paprika
1/4 tsp garam masala
Sprinkle of cinnamon
1 tbsp red curry paste
500ml vegetable stock
200ml coconut milk
Salt and pepper, to taste
Olive oil

Directions:
1. Peel and cut the butternut squash into small cubes. Make sure to remove all the seeds. Dice a shallot and mince 2 cloves of garlic.
2. Put all the powdered seasonings in a bowl and set aside.
3. Add a drizzle of olive oil to a pot and sauté shallot for 2-3 minutes. Then add the red curry paste and half the powdered seasonings. Once the shallot is softened add the minced garlic. Sauté for another 2 minutes.
4. Add the butternut squash to the pot and cover with vegetable stock. Then add coconut milk and two dried bay leaves. Bring to a simmer and cook for 20 minutes or until the butternut squash is fork tender. Then add the other half of the seasonings.
5. Take out the dried bay leaves and bend up the soup until velvety smooth.
6. Put the soup back into the pot and serve with some fresh bread.

Creamy Butternut Squash Pasta Recipe 👩🏼‍🍳

Looking for a delicious and comforting meal? Try this Creamy Butternut Squash Pasta! Perfect for autumn, this dish combines the rich flavours of roasted vegetables with creamy goodness.

Ingredients: (2 servings)
1/2 butternut squash
1 onion
1 red bell pepper
1 head of garlic
1 clove of garlic, minced
50g parmesan
250g burrata
Pasta of your choice
100ml oat cream (or normal cream)
1 tsp smoked paprika
Salt and pepper, to taste
Olive oil

Directions:
1. Preheat oven to 200°C.
2. Cut the butternut squash in half and remove the seeds. Cut the onion in half as well as the red bell pepper and remove the seeds. Trim the top of the head of garlic to expose the tops of the garlic cloves. Put everything on a baking tray and drizzle with olive oil.
3. Bake the vegetables in the oven for 45 minutes.
4. Allow the vegetables to cool for a few minutes before placing everything into a blender with the oat cream. It’s easiest to scrape the insides of the butternut squash with a spoon. Make sure not to use the skin. Blend until smooth.
5. Cook the pasta according to package instructions.
6. Add a drizzle of olive oil to a non-stick pan and sauté 1 minced clove of garlic for 2-3 minutes.
7. Add the blended sauce to the pan along with parmesan cheese and a little bit of the pasta water.
8. Add the pasta to the sauce and serve with fresh burrata.
