Almond Banana Bread

This is the best vegan and gluten-free almond banana bread recipe. It's healthy, naturally sweetened and absolutely delicious.

Equipment

  • 1 High Speed Blender optional
  • 1 Cake Tin

Ingredients

  • 100 g gluten-free oat flour
  • 6 tbsp almond flour
  • 1 tbsp coconut sugar
  • 2 ripe bananas
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • pinch of salt
  • blanched almond shreds
  • peanut butter for drizzling

Instructions

  • Preheat oven to 170°C.
  • Put bananas and maple syrup in a blender and blend until smooth. If you don’t have a blender you can use a fork to mash the banana.
  • In a separate bowl, add all dry ingredients and mix to combine.
  • Add the banana maple syrup mixture to the dry ingredients and combine into a thick batter.
  • Pour batter into a small oven safe dish lined with parchment paper and sprinkle with blanched almonds. Bake in the oven for 60 minutes.
  • Allow the banana bread to cool completely before serving and drizzle with peanut butter.

Notes

Portion Size: You can simply double the ingredients to serve more people.
