In a small bowl, combine oat milk and applesauce.
Add the rest of the ingredients and whisk to combine. You can also use a blender. The batter should be thick but pourable.
Place a non-stick pan on medium-high heat and add a couple of spoonfuls of pancake batter. Cook for 2-3 minutes on each side, until browned underneath, then flip. Repeat with the rest of the batter.
Serve the pancakes immediately with fresh fruit of your choice and a drizzle of maple syrup.
