Summerrolls with Peanut Sauce

Summerrolls are such an easy and delicious snack in the summertime. Simply add your favourite vegetables and enjoy with a delicious creamy peanut sauce.

Ingredients

For the summerrolls

  • rice paper sheets
  • rice noodles
  • 1 cucumber finely sliced
  • 1 red bell pepper finely sliced
  • lettuce finely sliced

For the peanut sauce

  • 3 tbsp peanut butter
  • 2 tbsp coconut aminos more to taste
  • 3 tbsp maple syrup
  • 1 tsp garlic powder
  • 1/2 lemon or lime juiced
  • 1-2 tbsp hot water

Instructions

For the summerrolls

  • Cut your vegetables into thin sticks and cook your rice noddles according to package instructions.
  • Place your rice paper sheet into water for about 5 seconds. Put the soaked rice paper on a plate and wait until it starts to soften. Then add your ingredients.
  • Roll up each sheet and make sure not to overfill them.

For the peanut sauce

  • Whisk all ingredients together in a small bowl until smooth. You can also use a blender.

Notes

  • You can add any fillings you enjoy. I also like adding fresh coriander, mint, mango, red cabbage, sesame seeds, tofu, spring onion or carrot.
