Hummus Tomato Bruschetta

This healthy and delicious hummus tomato bruschetta bread is the perfect quick and easy lunch idea. It's vegan, gluten-free and super tasty.

Ingredients

For the tomato bruschetta

  • 100 g cherry tomatoes chopped
  • 1 clove of garlic chopped
  • 1 small red onion chopped
  • 1/2 lemon juiced
  • fresh basil
  • salt and pepper to taste

Other Ingredients

  • homemade hummus
  • gluten-free bread

Instructions

  • In a small bowl, combine tomatoes, garlic, onion, basil, lemon juice, salt and pepper.
  • Spread a thick layer of homemade hummus onto your gluten-free bread and add your tomato mixture on top.

Notes

Herbs Variations: I used basil for the tomato bruschetta but you could also use fresh parsley or coriander.
