
Salted Caramel Cookies Recipe
I think I have finally mastered the perfect vegan and gluten-free cookie recipe. If you’re gluten intolerant like me, you will know the struggle when it comes to baking gluten-free. But I promise you these cookies wont disappoint!
Ingredients
- 70g margarine
- 70g brown sugar
- 1 packet vanilla sugar or 1 tbsp vanilla extract
- 120g gluten-free flour
- 50g oat milk
- Salted caramel chocolate (I used Lindt chocolate)
Mix the margarine, brown sugar and vanilla sugar together in a bowl or use a Thermomix on speed 3 for 30 seconds. Next up you have to mix in the flour and milk. If you’re using a Thermomix speed 4 for 40 seconds. Break the chocolate into small chunks and gently fold it into the dough. I used the Lindt salted caramel chocolate and this is honestly the best vegan chocolate I have ever tried. Probably the main reason why these cookies are so damn good. Pre-heat the oven to 180°C and place your dough balls on a baking sheet. I used a tablespoon to measure out each cookie. Leave them in the oven for 15 minutes and let them completely cool down afterwards.
